The story
Roux opened in 2014, the culmination of chef Martín Rebaudino’s long journey through some of Europe’s most respected kitchens. The restaurant occupies a corner in Buenos Aires that Rebaudino discovered thanks to his daughters – the same spot that once held a bar called Santé. Today, it is a place of three distinct atmospheres: a main dining room that feels like a small Parisian bistro, sheltered outdoor “veredas” that are comfortable and climate-controlled, and a wine-cellar dining space where meals unfold in an intimate, wood-lined setting. Each space offers the same dedication and service, but a different way to experience Rebaudino’s cooking.
Rebaúdino’s story begins in La Cumbre, where his grandparents founded a roadside restaurant in 1948. He grew up there, learning to cook “by force,” as he says, before realizing it was in his blood. After studying in Buenos Aires, he travelled to Spain, training in Galicia with Chef Riviera – where he learned the secrets of seafood – and then in Madrid at Zalacaín and Príncipe de Viana. In the Basque Country, he worked with Martín Berasategui, who taught him a new way to prepare bacalao, replacing the recipe from Rebaudino’s own father. He also spent time in the kitchens of Arzak and Akelarre. When he returned to Argentina, he worked for nearly two decades at a renowned Spanish restaurant before opening Roux. His wife Josefina runs the front of house, and together they lead a team that, Rebaudino says, produces the Roux experience.
Roux’s contemporary cuisine is served in a setting that Rebaudino considers as important as the food itself. The restaurant is cared for like a home, and the team’s commitment to detail has earned it a Michelin Recommended distinction – a recognition that reflects both the cooking and the atmosphere. The menu changes regularly, and the wine list is a point of pride, with a cellar that doubles as a dining room.
