Maria and Tom Heidenreich frame their Alpine cooking around pasture, water, earth, fire, and nectar. The couple treats these components as a structural blueprint rather than a seasonal trend. Dishes emerge through direct heat and precise reduction, as demonstrated by the flamed trout served over yellow lentils and buttermilk broth. This approach to contemporary culinary style keeps the regional landscape present without overwhelming the palate.

The menu shifts according to market availability while maintaining a consistent focus on texture and temperature contrast. Grilled romaine hearts deliver a gentle smokiness that balances the delicate Bluntau salmon trout. At the Stieg'nhaus, you can stay overnight and dine in a dreamy atmosphere where Mallorca meets Scandinavia meets the wider world. There are only seven tables (reservations recommended!), each reflecting the meticulous attention to detail of owners Maria and Tom Heidenreich: fine tableware, delicate wine glasses, and linen napkins. We put together our own menus – a vegetarian dish is spontaneously crafted for us using our preferred ingredients. To start, there’s flamed char on yellow lentils and buttermilk broth. Grilled romaine lettuce hearts offer a pleasantly smoky counterpoint to the delicate bluntau salmon trout. A colorful vegetable garden is nestled on Jerusalem artichoke purée. And for dessert? Kaiserschmarren! With rum-soaked raisins, apple-rhubarb compote, and homemade vanilla ice cream. Grade 12 out of 10. Personal service, lovely drink selection (including non-alcoholic options).
