Sibling chefs Richard and Sonja Rauch run a dual-kitchen concept blending traditional tavern fare with award-winning Steiermark cooking.

The story

Geschwister Rauch – Wirtshaus in Feldbach: Regional Steiermark Cuisine

A sibling legacy in Trautmannsdorf

Geschwister Rauch – Wirtshaus in Feldbach anchors its Steiermark cuisine in a family tradition spanning more than a century. Richard and Sonja Rauch inherited the property where they grew up, carrying forward a lineage connected to the village for over one hundred twenty years. Their approach treats cooking as a shared joy rather than a distant craft. Guests encounter this warmth immediately upon stepping onto the sunlit terrace or settling into the main dining room.

Two kitchens, one regional philosophy

The establishment operates with a deliberate split between daytime tavern service and evening gourmet presentations. Both menus carry Richard Rauch’s distinct hand while respecting different pacing. Traditional techniques sit comfortably alongside seasonal experiments. Perfect ingredients drive every decision, keeping the focus firmly on local produce and thoughtful preparation.

Standout plates from tavern to table

Tasters often begin with the Trautmannsdorfer Hochzeitssuppe, a clear broth featuring four handmade pasta varieties, root vegetables, and beef marrow. The marinated trout arrives alongside pickled wild asparagus, potatoes, and toasted linseed. Heartier orders feature the dry-aged pork chop or the house-raised Parisian schnitzel. Freshly baked apricot palatschinken complete the meal. These selections reflect the consistent craftsmanship recognized by recent Gault & Millau ratings.

The renovated villa and terrace dining

Across the courtyard stands the Villa Rosa, a completely restored 1913 manor house offering six rooms and two suites. The recently updated interiors blend historical architecture with comfortable modern furnishings. Dining extends outdoors during warmer months, where the spacious terrace accommodates well-spaced tables. Private chef table evenings provide an intimate view of the kitchen operations.

On this Labor Day, the terrace of the Rauch siblings' inn proves to be well-filled, so we promptly take our seats under the guidance of a capable team and eagerly browse the extensive wine list. Having made our selections, we are treated to the classic "Trautmannsdorf Wedding Soup" featuring four homemade garnishes, root vegetables, and beef marrow, alongside marinated trout with pickled wild asparagus, potatoes, and flax seeds. Solid craftsmanship, clear direction. Also highly recommended: the exceptionally juicy Paris-style schnitzel from the house's own free-range pork with pea salad and cucumber-dill salad, and finally, the exemplary freshly baked apricot crepes.
