A parsnip cream soup illustrates the menu’s playful side, built around a firm parsnip bonbon and a delicate cocoa sponge. It may be old-fashioned elsewhere, but not at Das Pfleger, where the food brings sheer delight. The parsnip cream soup, accompanied by a parsnip candy and a cocoa sponge, is a successful sweet-on-sweet interplay. Elegantly scattered mustard seeds top the several-centimeter-thick, perfectly medium-cooked roast beef. The cauliflower side dish is served twice: once pleasantly seared, and once as a cooling cauliflower ice cream. The à la carte restaurant Das Pfleger, led by head chef and son of the house Tom Pfleger, can certainly serve regional classics like Wiener Schnitzel or beef soup, but it is the refreshingly bold approach of the rest of the menu that truly wins us over.
