The story

Kirchenwirt Rust: Traditional Burgenland Cuisine Near the Fischerkirche

Roots by the Lake

Kirchenwirt sits just steps from the Fischerkirche in Rust, serving straightforward Burgenland cuisine that reflects the area’s rural traditions. Barbara Eselböck and Alain Weissgerber opened the doors after years of visiting the neighborhood. They selected the site because it sat close to their own home and matched their appreciation for the building’s character. Summer evenings bring a cool breeze off the lake and the sound of storks circling above the roof tiles.

The Chef and the Kitchen

Karlheinz Ruttmann manages the pass with quiet authority. His method prioritizes long standing techniques over fleeting trends. The Gault & Millau guide awarded the restaurant 14.5 points for 2026, noting how smoothly he balances rich flavors with precise execution. The kitchen operates on a simple premise: respect the ingredient and apply steady heat.

Hearty Classics and Local Flavours

The menu revolves around dishes that have anchored traditional Austrian cooking for generations. Braised tripe with fresh chanterelle mushrooms serves as a frequent favorite. Sour kidney stew and blood sausage dumplings follow the same unpretentious logic. Alpine cheese accompanied by cured ham shank and slow cooked veal goulash complete the lineup.

Barbara Eselböck and Alain Weissgerber have treated themselves to a new project—one they feel deeply connected to. First, because they live practically around the corner, and second, because they know the guests at the Kirchenwirt well. It’s a tavern situated right next to the Rust Fishermen’s Church. On warm summer evenings, the storks clatter, and a gentle but cool breeze drifts over from the lake. At the stove stands a seasoned chef, Karlheinz Ruttmann. Weissgerber has known him since old days. On the plates, this translates to: world-class tripe with wild mushrooms, sour kidneys, blood sausage slices, and other culinary masterpieces. Yes, tourists also visit Rust who may not be quite as drawn to traditional, hearty fare. But even for them, Ruttmann offers delightfully rustic yet magical dishes. The Cordon Bleu (with Alpine cheese and ham) is always a crowd-pleaser. The veal goulash is too. Address: Rathausplatz 18, 7071 Rust, Austria.
