Lizzy Aigner cooks with delicacy, richness, and purity – exactly as one would hope for from excellent Italian cuisine. The homemade focaccia soaks up the piping hot minestrone poured tableside, glistening with little pools of oil and a touch of Parmesan – it simply couldn't be done better. The vegetables are left perfectly al dente, just like the Pasta Vongole that follows. It carries an enchanting aroma of wine, fresh mussels, and herbs, is delicately seasoned, and the broth invites every last drop to be spooned up. The thinly sliced Vitello Tonnato similarly highlights the finest ingredients – right down to the baked capers from Sicily. This commitment to quality is mirrored in the bright, tangy dessert with a subtly bitter blood orange note and almond.
