The story

Brandstätter Restaurant Salzburg | Modern Traditional Austrian Cuisine & Awards

Brandstätter brings modern traditional Austrian cooking to Salzburg, where chef Tobias Brandstätter has shaped the kitchen's direction for over two decades. The restaurant occupies a building that began as a post-war farm guesthouse before being transformed into a four-star hotel by his parents, Elfi and Bernd Brandstätter. Now in its third generation, the family maintains an honest approach to food and pricing, a philosophy reflected in the establishment's Gault & Millau rating of 13.5 points and a Michelin Bib Gourmand distinction. Tobias bridges alpine heritage with contemporary technique, serving dishes like venison carpaccio with celery and black truffle alongside classic preparations that respect local ingredients.

Signature Flavors and Seasonal Plates

The menu highlights seasonal produce and regional game, offering starters such as pan-fried duck liver with apricot and celery or marinated salmon paired with wasabi. Main courses range from crisp-skinned zander fillet with vegetable parcels to hearty options like veal schnitzel and beef roulade with broad beans. The kitchen balances these substantial plates with refined touches, including ricotta Schlutzkrapfen finished with brown butter and parmesan. Guests often finish with house specialties like fluffy curd dumplings served on roasted apricot compote or a warm semolina soufflé set atop mango and papaya.

Pine Wood Rooms and Garden Terrace

Dining takes place in environments designed for lingering, from the aromatic pine-filled Zirbenstube to the romantic outdoor Gastgarten surrounded by hydrangeas and century-old trees. The interior blends rustic charm with understated elegance, featuring individualized rooms and a layout that encourages conversation without sacrificing comfort. Staff members often recognize regular guests by name, contributing to a relaxed atmosphere where personal service extends to remembering preferences for still or sparkling water. This warmth complements the extensive wine list, which features strong selections of Austrian and international classics curated by sommeliers Andreas Eichberger and Nicole Schellenberg.

Elegant-rustic country inn with cozy lounges. Modern traditional cuisine is served for lunch and dinner in excellent quality. The tender venison carpaccio with two varieties of celery and black truffle is presented in flawless condition. The celery-truffle soup is also outstanding, as is the delicate duck liver on celery and apples. Next comes a zander fillet with crispy skin, accompanied by vegetables and celery dumplings. Here too, the kitchen's expertise clearly shines through. To finish, the fluffy, melt-in-your-mouth quark dumplings on roasted apricots are simply delicious. The friendly and attentive staff prove to be highly competent and accommodating. The extensive wine list features a well-curated selection of Austrian and international classics.
