Ask any gourmet in Salzburg about their favorite chef, and you will often hear the name Richard Brunnauer. So what is this excellent reputation built on? The restaurant is located in a charming suburban villa overlooking the back of the fortress, elegantly designed with ample space between tables. There is the calm and professional service, led by Sybille Brunnauer. And then there is, of course, the kitchen, where luxury remains understated: a few shavings of truffle are grated over the poached egg on spinach, the veal carpaccio is crowned with a goose liver praline, and the pink venison loin is accompanied by a Madeira crêpe. The desserts are spectacular, such as the wonderfully balanced sweet and tangy goat cheese espuma alongside date cake. One could easily lose themselves in the wine list.
