The story

Das Schrei Salzburg: Contemporary European Cuisine & Surprise Menus

The Kitchen and Its Philosophy

Das Schrei in Salzburg serves contemporary European cuisine built around an unscripted dining format. Chef Daniel Reifecker guides modern Salzburg cooking toward seasonal sourcing and efficient preparation, partnering directly with local producers to secure peak freshness. This consistent approach earned the restaurant a 14.5 rating from Gault&Millau in 2026, which praised the precise execution of their surprise service. Guests simply select a course count, while the team handles the rest.

Signature Plates and Techniques

The menu unfolds through carefully composed plates that balance technique with straightforward flavors. Early courses often feature French toast layered with poultry liver mousse and crisp bacon, followed by variations of heirloom tomatoes dressed in fig leaf oil. Midmeal selections highlight whole linefish roasted alongside celery and wild porcini, alongside partridge breast served next to a farce-stuffed zucchini blossom. The progression concludes with a warm madeleine spooned over tonka bean mousse and house-churned pistachio ice cream with fresh peaches.

The Dining Room and Chef’s Table

Light maple tables anchor the main floor, contrasting with exposed brick walls and structural steel fixtures that define the space. A dedicated Poet Audio system fills the room with clear sound without overwhelming conversation. Visitors can reserve the Chef’s Table to watch the entire seven-course sequence unfold directly from the pass. The layout supports both the structured kitchen experience and a more relaxed pace for standard seating arrangements.

At the restaurant „Das Schrei“, there are only surprise menus. Guests who take the chance are initially surprised by Daniel Reifecker with French toast featuring poultry liver mousse, bacon, and other kitchen surprises. When this is followed by an assortment of tomatoes with fig leaf oil vinaigrette or gnocchi with carbonara foam, you know: someone here truly knows their craft. The subsequent dishes confirm this direction: the perfectly cooked zander with celery and porcini mushrooms, as well as the two partridge preparations – breast and a zucchini blossom stuffed with savory filling – impress both in flavor and presentation. And before you savor the tonka bean mousse with a lukewarm madeleine, you still get to enjoy homemade pistachio ice cream with peaches.
