On this intimate yet warm May evening, the house aperitif with a strawberry-rhubarb-lavender note turns out a bit delicate. But the kitchen follows with a striking start: a variation of goose liver with robust flavors crafted by Kaiblinger proves delightful – the red Traminer complements the dish excellently with its own stylistic flair. Fish preparation is traditionally admirable at the Esszimmer; both the sea bass with an Arabic touch and the smoked wels catfish are highly convincing. The glazed venison loin, enchantingly tender, plays beautifully with the aromas of the young Rosso di Montalcino, though we like the accompanying chocolate cake less. The duet of panna cotta and grapefruit delivers a successful finale, elegantly underscored by Schwarz's Rosé Muscat.
