At the Glass Garden in Salzburg, Chef Simon Wagner leads a refined modern cuisine program that earned a 2026 Michelin star and four Gault&Millau toques. He works inside a structure originally raised as a medieval defensive tower in 1350, now serving as the crown jewel of a premier five-star property. His service model lets diners select individual courses freely, which keeps the focus on ingredient quality rather than rigid tasting sequences. The brigade executes these selections with strict timing and measured seasoning.

Signature preparations

Plates rely on sharp contrasts and clean finishes. A fillet of pickled zander arrives alongside dehydrated watermelon, toasted coconut, and verjus to cut through the richness. Glazed sweetbread pairs with smoked eel and a velouté built from roasted germ yeast, offering a savory counterpoint. Wild-caught turbot rests on beurre blanc next to lightly grilled young artichokes, while the pastry station finishes the evening with a delicate peach preparation. Each dish demonstrates precise temperature control, hallmark traits of serious fine dining.

The glass dome and surrounding views

Architect Volkmar Burgstaller completed the transparent steel-and-glass canopy that crowns the restaurant during a 2018 renovation. Floor-to-ceiling glazing pulls in daylight and frames sweeping panoramas over the historic rooftops and forested hills beyond. The dining room balances polished contemporary surfaces with the thick stone walls of the original castle keep. Quiet acoustics and unobstructed sightlines make the elevated location feel both grand and intimate, providing a steady backdrop for contemporary cooking.
