The story

M32 Salzburg: Modern Austrian cuisine with panoramic views

A culinary perch above the old town

M32 stands high on the Mönchsberg in Salzburg, where Anton Fritzenwallner guides an Austrian kitchen that leans toward Mediterranean accents. Seasonal produce drives the menu, while refined techniques keep every plate focused and deliberate. The Gault & Millau recognition reflects this steady execution, rewarding guests who appreciate precision alongside panoramic views.

Plates that anchor the experience

Pulpo arrives alongside a vibrant paprika risotto that carries the same warmth as the local peppers. Braised lamb follows a slow cook until the meat yields cleanly to the fork. Dessert plays with texture through a mascarpone cream shaped to resemble a ripe peach. These choices ground the elevated setting in honest flavors.

The room and its shifting mood

Part of the Museum der Moderne, the interior blends architectural lines with curated art pieces. Guests arrive via the Mönchsberg elevator, stepping straight into a space that shifts from bright daytime dining to a cocktail-lit lounge after sunset. Kitchen staff and waiters move with practiced speed, keeping the pace brisk without sacrificing accuracy. Visitors return regularly because the Austrian cooking delivers consistent results above the baroque skyline.

The best view of the Baroque Old Town? Still from the M32 on the Mönchsberg. Because the restaurant is structurally part of the Museum of Modern Art, the interior features artistic attractions – and is, of course, a tourist hotspot. But you also meet locals here, which is a compliment to the kitchen. In fact, the octopus with paprika risotto and the braised lamb are excellent, the Wiener Schnitzel is executed flawlessly, and the mascarpone cream, disguised as a peach, is perfect. The kitchen and service operate swiftly. But everything comes at a (good) price; after all, the view has to be paid for. Address: Mönchsberg 32, 5020 Salzburg, Austria.
