The story

Gamskogelhütte Fine Dining by Stefan Lastin – Sankt Michael im Lungau, Austria

High above the Katschberg, at 1,850 meters on the border of Carinthia and Salzburg, Gamskogelhütte combines alpine tradition with fine dining. Its modern cuisine, rooted in regional ingredients and homemade craftsmanship, has earned a Michelin recommendation for 2026.

The kitchen works with what the surrounding mountains and valleys provide. Many herbs and vegetables come from the restaurant’s own garden in Rennweg, supplemented by trusted regional suppliers. Bread is baked fresh from sourdough as needed. Speck and cured sausages are made in spring and autumn, aged in the hut’s own smoking and drying chamber. Every dish is prepared on-site, from scratch.

The story of the hut began in the 1970s, when Sigi and Andi Strafner took over a tiny building with no water or electricity. Over four building phases, they expanded it with love for detail and hospitality. Today, the hut is run by Nina and Peter Strafner-Aschbacher and their team. They heat with geothermal energy, solar power, and wood, and draw water from three springs they tapped themselves.

The setting is as striking as the food. The hut sits amid the Nock Mountains and the foothills of the Hohe Tauern, surrounded by marked hiking trails and ski slopes. In summer, guests can walk or cycle up; in winter, the ski area opens the mountain. The interior is warm and rustic, with an open fire and panoramic windows that frame the peaks.

Fine dining is offered Thursday through Saturday evenings, with a chef’s table experience by reservation. For groups of eight or more, exclusive dinners can be booked on any chosen date. The restaurant also caters to private parties and events, and even hosts weddings – the hut is home to the highest civil registry office in both Salzburg and Carinthia.

Sustainability is a core value. Gamskogelhütte holds the Austrian Ecolabel, committing to local sourcing, energy efficiency, waste reduction, and support for regional economy. The team encourages guests to respect the fragile alpine environment – stay on marked paths, carry out waste, and appreciate the landscape that makes this place unique.

A meal here is not just about the plate. It’s about the altitude, the air, and the honest work of people who have tended this mountain for generations. That is the kind of fine dining that earns recognition – and stays in memory.

It has been about three years since the Gamskogelhütte received the ultimate culinary refinement with Fine Dining by Stefan Lastin. The surprise menu is practically essential. Among the dishes from the kitchen, the delicious scallop sourced from Scotland, served with an exquisite coral cream, truly stands out. The Ikejime trout is ingeniously paired with textures of red cabbage, caviar, and set buttermilk, while Lastin’s approach to Kasnudeln is delightfully daring yet sophisticatedly unconventional. Almost brilliant: the perfectly seared foie gras accompanied by smoked eel tartare and a creole cream. While the service could use a touch more elegance, we easily overlook this given the warm hospitality and the exceptionally well-matched wine pairing.
