The story

Hueber der Wirt in Bründl: Regional Austrian Cuisine Near Scheibbs

The kitchen and its philosophy

Hueber der Wirt in Bründl sits near Scheibbs, where the kitchen serves regional Austrian cuisine rooted in the Mostviertel landscape. Stefan Hueber oversees the operation alongside chef Christopher Thomas Auer, who treats every plate as a direct reflection of local terroir. The menu functions like a geographical map, prioritizing established relationships with producers over fleeting trends. A carefully curated wine list supports the local Austrian cooking, drawing attention from critics who awarded the venue fifteen point five stars and a Bib Gourmand designation.

Standout dishes and seasonal focus

Evening service shifts toward tasting menus that cycle through four or six courses. Blue prawns arrive balanced against kalamansi, sharp chili, and sweet Wachauer apricots. The reinanke follows in a butterfly cut, layered with fresh tomatoes, burrata, sumak, and grilled zucchini. Rib eye finishes with XO sauce and rests beside five distinct dipping sauces for individual customization.

The rooms and the building’s history

The property has hosted travelers since the late nineteenth century, standing quietly between the Alpine foothills and the Wachau valley. Stefan Hueber maintains the structure while updating nine guest rooms to match the surrounding landscape. Heavy timber frames and natural stone surfaces create spaces that feel substantial rather than staged. Daytime service leans toward their version of Wirtshausküche 2.0, offering hearty classics alongside refined preparations.

St. Georgen an der Leys is hardly just around the corner! That may be true. But it is home to Hueber – der Wirt in Bründl, a flagship inn that offers an excellent fine-dining menu in the evenings at a very fair price, along with overnight accommodation. Returning to the six-course menu, which shines with dishes such as blue shrimp played against tart kalamansi, spicy chili, and sweet Wachau apricot; butterfly-cut brill paired with tomato, burrata, sumac, and zucchini; the purist’s Rib Eye XO Beef served with five dipping options; or vineyard peach accompanied by raspberry sauce, tomato, yuzu, and pickled ginger. Combined with a highly interesting wine list and a cheerful, well-organized team, this makes for a wonderful evening that is worth every single kilometer of the journey.
