The story

Liebstöckl in Kaltenbach: Alpine Herbal Cuisine in the Zillertal

The Herbal Kitchen

At Liebstöckl in Kaltenbach, the herbal cuisine relies entirely on plants cultivated right outside the kitchen doors. Chef Michael Platzer guides the service with a quiet confidence, treating aromatic leaves as the primary ingredient rather than decorative garnish. His approach merges classic Tyrolean techniques with contemporary plating, a method that earned the venue one toque and twelve points in the 2026 Gault&Millau guide. The kitchen philosophy stays grounded in local terroir while reaching for precise flavor balance.

Seasonal Plates & Local Roots

The menu shifts with the growing season, drawing ingredients from suppliers within a hundred kilometers. Summer tables feature light preparations like Tiroler Kwellsaibling served alongside chive mousse and fresh cornsalad. A substantial burger combines succulent beef patties, highland bacon, and house-made herb mayonnaise. Even desserts reflect the garden harvest, whether through lavender-infused smashed pancakes with roasted apricots or forest chocolate paired with raspberry espuma.

Warm Alpine Ambience

Guests settle into a relaxed dining space that balances rustic mountain charm with clean, modern lines. The staff cultivates a genuinely welcoming rhythm, moving between the open kitchen and the sunlit terrace without ever feeling rushed. This steady hospitality ensures that the herb-forward plates feel approachable rather than academic. Visitors consistently return for the simple pleasure of meals that taste exactly like the surrounding valleys.

In Kaltenbach, in the Tyrolean Zillertal, stands the Kräuterhotel Hochzillertal. That there would also be an exciting restaurant attached to it was only a matter of time. Now Michael Platzer, the man behind the stove, has found his domain. It is called Liebstöckl and celebrates the art of creating magical culinary experiences using fresh (and homegrown) herbs. What does that look like in practice? The Tyrolean Kwellsaibling trout is served with chive mousse and chickweed, while the "Liebstöckl Burger" features a juicy beef patty alongside Hochzillertal bacon, tomato relish, and herb mayonnaise. Clearly, someone here has a sure hand when it comes to working with herbs.
