The kitchen relies on lamb raised among the vine rows and forest game supplied by neighboring hunters, processing every element with minimal intervention. The fixed six course sequence builds around contrasting temperatures and pronounced acidity rather than heavy sauces. A composed salad features grilled tomatoes, fresh corn, and peppery cress dressed in a cultured whey and fruit vinegar blend. Slow roasted carrots rest atop a crust infused with fermented rutabaga and einkorn miso, creating a rich base for the dish. Delicate slices of poached kohlrabi cradle wild morels topped with a clear lemon verbena gel, while the final savory course presents lean venison loin accompanied by whipped yogurt and a tightly reduced blackcurrant sauce.

Decades ago one of the quality pioneers in wine and gastronomy in South Styria, Der Sattlerhof continues to rank among the top establishments in the region. Anna, Hannes, and Markus Sattler focus on local products, which they know how to prepare incredibly creatively and deliciously. The (mandatory) six-course menu is dominated by vegetables, transformed into varied, wonderful dishes. To the salad featuring grilled tomatoes, corn, and garden cress, served with a dressing of whey and vinegar, the melt-in-the-mouth carrot tart enhances an intense sauce made from fermented rutabaga with emmer-miso. Paper-thin, poached kohlrabi slices cover the finest morels with lemon verbena gel. Nearly purist in style, the venison loin is served with a touch of yogurt and peppered blackcurrant sauce – simply delicious. Anna's husband and sommelier Thomas Ferrand has curated four glass-by-glass beverage pairings for it – alongside a vast bottle selection – ranging from top-tier champagne to the renowned house Sauvignon Blanc from the Pfarr vineyard, through to alcohol-free discoveries like the amber-colored herbal drink Juste or the König'scher bird cherry juice (ideal with venison).
