The story

Atelier Freund-Schafft Bad Häring: Refined Austrian Fine Dining in the Tyrol

Precision behind the pass

Atelier Freund-Schafft brings refined Austrian fine dining to Bad Häring, where chef Markus Freund treats every ingredient as a component requiring exact measurement. His kitchen runs only Thursday through Saturday, preserving the stamina needed for a fourteen-course progression. This focused schedule aligns with the recognition that earned the venue sixteen points from Gault & Millau in 2026. The score reflects a consistent standard in modern Austrian cuisine.

Textures and layered flavors

A single course often unfolds across multiple forms rather than resting on one plate. The carabinero arrives atop a smooth crustacean foam alongside kimchi and wild mushrooms, then reappears separately as a dense cream, a crumbly earth element, and a sharp pickle. A paper-thin vegetable crisp rests above the bowl to catch the final bite. Andrea Weidenauer handles the sweet finish with equal structural care, composing desserts that shift expectations with each deliberate spoonful, proving that contemporary Tyrolean cooking values structure over spectacle.

Quiet space above the valley

The dining room sits quietly inside a five-star wellness property overlooking the Inn valley. Large windows frame the surrounding peaks while the interior maintains a restrained palette of natural materials and soft lighting. Guests move between the spa terraces and the kitchen entrance without losing sight of the mountains. This steady backdrop keeps the attention fixed on the food rather than decorative gestures.

Every Thursday, Friday, and Saturday, the small gourmet restaurant Atelier Freund-Schafft at the Wellnesshotel Panorama Royal in Bad Häring opens its doors – for both hotel guests and à la carte diners. Craftsmanship, precision, perfection, and the dedication of Chef Markus Freund and his kitchen team form the foundation for a truly extraordinary 14-course menu – a first-class culinary experience! One of our favorites: the carabinero prawn on crustacean foam, accompanied by kimchi and mushrooms – served as a cream, as "earth", and pickled. A paper-thin salad chip as a topping ensures visual appeal and the perfect crunch. Andrea Weidenauer's pastry creations are highly recommended for all dessert lovers. Her plates are clean and meticulously composed, with each course holding a pleasant surprise. The only downside of the evening: the non-alcoholic beverage pairing could use some improvement.
