Founders and kitchen approach

Butchers Coffee in Antwerp delivers a relaxed brunch atmosphere inside a converted retail unit in Borgerhout. Dave Haesen and Hélène Geerts transformed the former butcher shop after managing coffee and vinyl at Andy Roasters. The project earned a spot on the Le Fooding list, validating Chef Flor De Laat’s approach to generous portions that embrace Anglophile comfort food traditions without apology.

Signature plates and ingredients

The breakfast bun layers an egg patty, cured bacon, and molten cheddar inside a toasted brioche roll, accompanied by a substantial gherkin. Ricotta pancakes arrive with banana ganache and extra bacon for diners seeking richer American brunch classics. Visitors can also order house-made granola with quince compote and Greek yoghurt, or a focaccia stacked with mortadella, pesto, mozzarella, and radicchio.

Interior layout and material choices

Pink linoleum flooring extends across the main dining area, bordered by fixed wooden banquettes along the perimeter walls. A circular central bar organizes the service flow, sitting directly beneath retro pendant lights. The tiled storefront frames the street outside, while the open kitchen layout allows guests to watch the team prepare sourdough slices and whisk eggs throughout the morning.

Spot the different between Butchers Coffee 1.0 and 2.0? Honestly, neither can we! Bean dealer Dave Haesen, who already spins coffee and vinyl at Andy Roasters , has simply swapped the old butcher’s shop in Zuid for a fresh patch in Borgerhout. Tiled storefront, pink lino floors, wooden banquettes, a circular central bar, retro lighting… In this new shared space, co-created with Hélène Geerts (a recent escapee from the tech world), chef Flor De Laat’s calories-be-damned dishes embrace their anglophile influences with a cholesterol wink. Think brioche breakfast buns encasing an omelet patty, bacon and molten cheddar, served with a satisfyingly hefty gherkin; plump pancakes crowned with (slightly floppy) bacon and a memorably decadent banana ganache; or, for something more internationally inclined, a gloriously wobbly omelet alongside a thick wodge of sourdough bread from Keith Bakery (the in-house gluten department) and whipped butter.
