DOJO positions its contemporary Japanese cuisine inside a converted warehouse in Antwerp, where Chef Dennis Ekisola anchors the kitchen in a dedicated fermentation lab. Garum, koji, and extended aging periods form the technical backbone of his approach, which favors slow, restrained cooking to highlight pure ingredient profiles. Guests navigate these principles through structured Kaiseki and Omakase menus that let seasonal availability dictate the evening’s pace. This methodical execution has drawn steady critical attention, securing a place on the Le Fooding list and earning a 14 out of 20 score from Gault Millau.

Seasonal progressions and signature plates

Protein led tasting sequences begin with Irish oysters dressed in samphire and sea grapes before transitioning to dry aged bluefin tuna. The lean akami cut receives a pistachio dressing and soy cured egg yolk, while the richer belly portion rests in wagyu beef fat tare. A mid course features a gambero rosso tartlet enhanced with XO sauce and chive oil, followed by either a dry aged striploin or an upgraded A4 Wagyu beef selection. The progression closes with Japanese soft serve ice cream layered over strawberry, yuzu custard, and buckwheat crumble.

Industrial conversion and sightlines

Set along Samberstraat in the city’s former meatpacking district, the dining room combines raw concrete walls and untreated timber tables with minimalist spatial planning. Design input from Jef Meyer introduced recessed floor seating known as Horigotatsu alongside conventional table arrangements and an interactive counter layout. A centrally located kitchen permits direct observation of plating or provides live camera feeds projected across large wall monitors. Exposed structural elements and focused lighting maintain a quiet backdrop for extended multi course meals.

Northern Antwerp, the former meatpacking district. A garage door simply branded Dojo. Behind it, a 200 m2 warehouse that’s been impressively remodeled with concrete, glass, steel, neon lights, Japanese artwork, a giant screen, and untreated wood tables. Welcome to the temple of German-Nigerian chef Dennis Ekisola and Valeriya Gertseva, for an underground omakase experience, brought to you by their arsenal of garum, koji, fermentations, and dishes grilled over wood charcoal. The show might begin with an oyster seasoned with the same bivalve in powdered form, homemade kudzu tofu and Ossetra caviar (optional) and sunchoke tofu with Belgian caviar (also optional). What next? Scallop sashimi, enhanced by a garum boasting subtle notes of fermented scallop; vivifying amberjack marinated for five to ten days in shio koju; the unique flavors of white kombu and bluefin tuna, plus umeboshi fermented in sake, monkfish with tofu and XO sauce, wagyu beef grilled over binchotan charcoal and served with garlicky ponzu sauce… ending with a yuzu tartlet. // Louis Sipido
