The intimate, serene setting was designed by Belgian top architect Benoit Viaene. With only 26 seats, the restaurant occupies a quiet corner of the Botanic Sanctuary hotel. The atmosphere is calm and focused, designed to let the food speak. The restaurant is open just two weeks per month, from Tuesday to Saturday, lending an air of exclusivity to every visit.
The kitchen offers three distinct tasting experiences. The Signature Lunch ‘Omakase style’ (€175) is a first encounter or a shorter option, featuring some of Gert’s most memorable signatures. The Omakase (€285) is a deeper exploration, and the Omakase ‘Deluxe’ (€385) includes an exclusive kitchen moment. Each menu can be paired with wine, deluxe wine, or non-alcoholic pairings. The menus are fixed, changing with the seasons and the availability of products.
