The story

Le Oui Antwerp: A Le Fooding Listed Bistro by Chef Louis Broos

The Chef and the Kitchen

Le Oui brings a ferment-focused bistro concept to Antwerp's Hendrik Conscienceplein, earning a listing from Le Fooding thanks to Chef Louis Broos' innovative dishes and a service style that trades formality for genuine connection. Louis Broos began cooking at fifteen and spent a decade and a half navigating classic French kitchens before settling into this intimate bistro on the square. He handles the pass, the cellar, and the floor himself, serving a maximum of sixteen diners across the ground floor and a wooden mezzanine. The kitchen builds its flavor foundation on Acid Fermentation, his own production of kimchi, miso, and spicy oil, which he folds into vegetable stews and protein dishes to deliver bright, tangy contrasts.

Seasonal Tasting and Fermented Flavors

Guests commit to a five-course tasting menu with no à la carte choices, letting Broos adjust ingredients daily based on what arrives fresh. The menu highlights preserved elements throughout the courses, such as fennel braised in kimchi butter served with fresh peas, or homemade pappardelle mixed with 'nduja, goat cheese, and pickled oyster mushrooms. Richer proteins appear too, like a Carima rib steak matured for two months and paired with a star anise jus, followed by a steamed chocolate cake infused with vanilla and orange zest. Each plate demonstrates how house-fermented ingredients can sharpen simple preparations without masking the core produce.

Atmosphere and Natural Wines

The dining area combines white and moss-green walls with framed Talking Heads vinyl records, projecting an energy that favors loud hip-hop over classical restraint. This atmosphere encourages interaction, with diners sharing plates and even dancing on tables in a layout that captures the spirit of a neighborhood bistro. The drink list focuses on natural wines selected to match the bold acidity of the fermented components, ensuring every glass balances the spice and funk of the kitchen output.

All good things come in small packages! On the unmissable Hendrik Conscienceplein public square, chef Louis Broos (ex-L’Épicerie du Cirque and Graanmarkt 13) is popping open bottles and spinning plates for 10 guests downstairs and six upstairs, in this intimate kot (meaning “broom cupboard” in Flemish) combining white and moss-green walls, framed Talking Heads vinyl records, a wooden mezzanine and good times guaranteed. Chef, sommelier, waiter, party starter and fermenter (Acid Fermentation, that’s him too) all rolled into one, that evening the jack-of-all-trades sent out: fennel stewed in kimchi butter, with fresh peas and a furikake crumble topping (a sesame seed and seaweed seasoning); brown butter beets with smoked yoghurt; homemade pappardelle pimped out with ‘nduja, goat cheese and pickled oyster mushrooms; Carima rib steak (matured for two months) doused in its jus , with star anise, roasted parsnip, cauliflower purée and crispy chicken skin chips; and for the sweet finale, a rich steamed chocolate cake served with whipped cream infused with vanilla, cardamom and orange zest. · Saffron Edge
