Marché Couverts brings straightforward French bistro cooking to Lange Koepoortstraat in Antwerp. Laurent Olives has guided the kitchen since opening its doors in 2015. The Albi native carries over the disciplined approach he developed during his earlier tenure at À la Ville. This steady hand earned the establishment a spot on the Le Fooding list for 2026.

Signature Plates and Seasonal Focus

The daily paper menu changes with what arrives fresh that morning. Diners frequently order the veal blanquette alongside an endive tarte tatin, two dishes that define the modern bistro menu under his direction. A rich mushroom jus accompanies button caps stuffed with Roquefort, while a crêpe forestière holds a creamy emulsion of wild fungi. He balances these heavier preparations with lighter options like skate cooked in a curried white wine sauce.

The dining space operates as both an elegant sit down venue and a traditional bistro counter. Patrons can claim one of the limited indoor tables or step out to the street level seating area. Laurent Olives, a Frenchman from the southern city of Albi, has been reigning over the kitchen of this elegant bistro / take-away shop / fine foods shop ever since 2015, following his venture À la Ville. With his characteristic “French touch,” his paper menu sits proudly in the window display: the day we went, it featured button mushrooms stuffed with Roquefort in a mushroom jus, and a crêpe forestière filled with fungi and a creamy mushroom emulsion; veal blanquette and endive tarte tatin, one of Laurent’s signature dishes along with coq au vin; juicy and perfectly grilled veal chop with celeriac, preserved lemon and carrot purée; pearly white skate in a curried white wine sauce with shallots, paired with a vegetable flan and fingerling potatoes; and a trio of cheeses (reblochon, chaource and Roquefort) before a creamy lemon tartlet. On the counter, you’ll find baked pies (potato, reblochon and cumin) and tarts (Menton lemon), which can be taken to go. // Kiko Zushi
