Chef Tan Chollada Phimpharua leads the kitchen, applying techniques honed at Graanmarkt 13 and Le Pristine to create dishes that bridge Belgian and Thai traditions. She works behind a mile-long chrome counter where the industrial stainless-steel decor meets the daily service. Evenings shift gears as Tan hosts guest chefs for pop-up events exploring menus from Neapolitan pizza to izakaya.

The brunch lineup features substantial plates that balance rich textures with sharp flavors. The avocado egg chili toast combines avocado cream, a poached egg, Parmesan dusting, homemade garlic chili oil, and crispy shallots on bread. Diners can request a side of smoked salmon to complement the heat of the chili oil. The kimchi grilled cheese melts stringy cheddar sourced from Van Tricht cheesemongers with caramelized onions, chili butter, and spicy garlic mayo.

On the ground floor of the WATT tower (the iconic concrete landmark designed by Léon Stynen), among the industrial, top-to-bottom, stainless-steel vibes, Notti brings serious brunch game with a hefty punch of Asian influences. Working the stoves behind the mile-long chrome counter, Belgian-Thai chef Tan Chollada Phimpharua (ex-Graanmarkt 13 and Le Pristine) uses carefully sourced ingredients to serve up brioches, granola, tartines and toasties to local laptoppers, insouciant flâneurs and hipsters alike. The day we went, options included: an avocado egg chili toast, composed of a slice of bread topped with an avocado cream, a poached egg, a dusting of Parmesan, a kick of homemade garlic chili oil and a sprinkling of crispy shallot, with a slice of smoked salmon on the side; and a kimchi grilled cheese with stringy cheddar from Van Tricht cheesemongers, caramelized onions, chili butter and a spicy garlic mayo (which lacked a bit of heat). Some days, when night falls, Notti goes into collaboration mode: Tan hands over the kitchen to guest chefs for pop-up dinners of Neapolitan pizza, Belgian-style izakaya or borscht, with a DJ set on the side. · Annie Zette
