At the helm are David Copmans and Lynn Schevelenbos (also behind Camino and Osaka), joined by their right-hand man, chef Max Simons, who are all on a mission to elevate street food to its finest form. Their undisputed champion? The Butter Bun, featuring a made-from-scratch sweet potato bun loaded with a beef patty from Carnivale butcher’s, oozy cheddar and ultra-thin onion rounds, all doused in salted butter – pure crispy, juicy, melty perfection. Other contenders include the Royal, which plays a rather classic hand with ketchup, mustard and pickles, and for those craving some fusion flavors, try the Korean-inspired option with breaded chicken, pickled red cabbage, glazed eggplant and a secret sauce.
