The story
The Jane in Antwerp opens a new chapter at the Montevideo warehouse complex, bringing Nick Bril’s modern Belgian cuisine to the historic Het Eilandje waterfront. After eleven years in a converted chapel, the restaurant relocated in October 2025 to embrace the raw energy of the old harbour district. The brutalist architecture designed by Nicolas Schuybroek Architects frames an intimate space where robust structures meet refined natural stone and custom ceramics.
Bril describes his kitchen as locally sourced but globally curious. Seasonal vegetables anchor the menu while fish is allowed to ripen before service. Shellfish and crustaceans take centre stage, with meat used sparingly to highlight purity over opulence. This approach to contemporary cooking honours classic foundations while introducing precise, time-sensitive techniques that preserve ingredient integrity.
Every element inside the dining room reflects a collective effort rather than a single vision. Lighting by De Studio-Tim Hooijmans interacts with textiles from Studio Nathalie Van der Massen and scents curated by Mon Dada. Guests can expect desserts and mignardises developed jointly by the pastry team and Bril himself. The resulting Gault&Millau 18.5 score confirms how seamlessly these artistic layers merge into one cohesive experience.
