The story
Chef Viki Geunes is a self-taught chef with an exceptionally developed tasting ability. He opened his first restaurant, 't Zilte, in Mol, earning his first Michelin star in 2004 and a second in 2008. After the MAS opened in Antwerp, he moved his restaurant to the top floor in 2011. Following a name change and relocation within the building in 2020, Zilte was awarded a third Michelin star in the 2021 guide – a recognition it continues to hold with the 2026 edition. Gault & Millau rates the restaurant 18.5/20.
The name Zilte refers to the taste and smell of the sea. Fish, crustaceans, and shellfish form the foundation of the menu, complemented by terroir products from trusted suppliers. Guests choose between the Iodé menu (seafood-focused) and the Végétal menu (vegetarian). A shorter lunch menu, Excitatory Zilte, is also available. The kitchen’s philosophy is one of pure, balanced flavours – creative, generous, and refined, without compromise.
The setting is integral. Wooden interior elements in balanced, earthy tones create a characterful atmosphere. The location on the top floor of the MAS offers a wide view over the Antwerp skyline, with the marine setting and the influence of the Scheldt river felt throughout.
Viki Geunes leads the kitchen with an obsessive pursuit of perfection. His wife, Viviane Plaquet, has been the lady of the house for over 25 years, ensuring guests feel at home. Head sommelier Aaron Moeraert expertly pairs wines, beers, and sakes with each dish. Their daughter, Gitte Geunes, is part of the front-of-house team. Together, they aim to create a total gastronomic experience that leaves guests with lasting memories.
