The story
In Leefdaal, just outside Bertem, Atelier Noun is the project of chef Bert Castermans and hostess Sandra Ponchaut. Their shared passion for gastronomy and hospitality defines every aspect of the experience. The kitchen describes its cuisine as "subtle Asian flavorings & exciting fresh-sour nuances," a promise that runs through each dish.
The menu follows a formula, allowing the team to guide guests through a harmonious sequence of modern cuisine. High-quality seasonal ingredients form the foundation, treated with care and respect. Japanese influences appear subtly—bringing balance, finesse, and depth—while the flavours remain pure and direct. Every detail is carefully crafted in respect of the product.
The atmosphere is deliberately informal. "No rigid etiquette, but genuine hospitality where everyone feels welcome," the restaurant notes. After a recent renovation, the interior now combines warm, cosy accents with touches of Japanese aesthetics, creating a space where refinement and informality are perfectly balanced. Guests are pampered by the passionate duo and their team, whether during lunch or dinner.
The wine selection is playful and surprising, chosen to enhance the food without formality. Atelier Noun's consistent quality and welcoming spirit earned it a Michelin Recommended distinction in 2026.
Above all, Atelier Noun is about enjoying at your own pace, in good company, with attention to every detail. It is an experience where taste, calm, and conviviality come together.
