The story

Beaucoup Fish Brussels: Fresh Seafood and Precise Techniques Near the Theater

The Daily Catch and Open Kitchen

Beaucoup Fish anchors its Brussels location around a straightforward seafood philosophy that prioritizes daily freshness over complex theatrics. Behind the Royal Flemish Theater, this bright dining room centers around a polished counter that displays the day’s fresh haul. The open kitchen operates without pretense, transforming raw ingredients into precise plates. A large salmon arrives cured as gravlax, setting the tone for a seafood menu built on technique rather than trend. Le Fooding recognized this disciplined approach when they placed the establishment on their 2026 guide, noting how the culinary performance unfolds right before guests.

Signature Preparations

The lunch service often highlights poached skate wing served alongside parsnips, green lentils, and a smoked mousseline sauce. Evening tables receive different attention, featuring marinated salmon dusted with porcini mushroom powder, black garlic cream, peanuts, and panisses. Grilled turbot meets green asparagus, poached egg, and arancini, while the bouillabaisse brings North Sea fish directly to the table. Each plate relies on clean layering, pairing delicate marine flavors with sharp accents like ponzu or soy caramel.

Space and Service Rhythm

Natural light fills the bright dining room, creating a relaxed environment near the Royal Flemish Theater. Staff maintain ultra-professional standards that never feel overly stiff, adjusting pacing between courses without interrupting conversation. The menu shifts regularly to match seasonal availability, keeping the wine pairings grounded in local producers. Guests often linger over the smoked chocolate ganache with sea buckthorn ice cream, using dessert as a natural pause before departure.

Behind the Royal Flemish Theater, you’ll find this bright, chic eatery with a counter displaying the catch of the day, a bar and an open kitchen where the culinary performance plays out – the opening act being a large salmon prepared as a gravlax! On the set lunch menu, said salmon is served with a mustard vinaigrette and a split pea and dill cream, one of many dishes to lap up in delight. The poached skate wing with parsnip, green lentils and smoked mousseline sauce is so filling that it’s best to slowly sip your drink and buy some time before tackling the captivating smoked chocolate ganache with shortbread, caramel and sea buckthorn ice cream. Meanwhile, the evening menu makes for a romantic affair: Ostréa Régal oysters from Brittany; shrimp croquettes; marinated salmon with porcini mushroom powder, black garlic cream, peanuts and panisses; soft-shell crab with soy caramel and honey; and eel in green herb sauce. What else? Ultra-professional service that never feels overly stiff. // Idoine Gérard
