The kitchen is led by Bart Van Hoecke, whose team works exclusively with fresh, market-driven produce and prepares everything in-house.
The menu at Brasserie Taste is described by the team as “Ceci n’est pas une brasserie” – a playful nod to the fact that the cooking travels far beyond Belgian borders. It takes guests on a journey through Italy, Spain, Asia, and Belgium, balancing respect for classic dishes with contemporary creations. The classics section holds its own with a vol-au-vent made with farm chicken, sole meunière, and hand-cut Piemontese beef tartare.
Wine receives equal attention: a carefully curated list is supported by an Eno-One system, allowing guests to enjoy exclusive wines by the glass.
