The kitchen and its philosophy

Brut Food in Brussels shapes its seasonal cuisine around a deeply rooted respect for the earth. Chef Alice Pollet launched her culinary path in 2011, drawing inspiration from years spent traveling abroad and discovering global techniques. Her rotating card updates every six weeks to match market arrivals, presenting exclusively plant-based compositions that guests may supplement with animal proteins. This dedication to responsible gastronomy recently secured three Radishes in the We’re Smart Green Guide.

The garden and the table

The heart of the operation sits within a half-hectare permaculture garden tucked into Belgian territory. Staff harvest vegetables, fruits, and edible flowers directly from these beds, supplying sixty percent of daily ingredients straight from their own soil. Kitchen scraps recycle into rich compost to nourish the ground, closing a tight production loop that honors the Table du Terroir and Good Food certifications. Every plate mirrors this circular approach while keeping flavor sharply focused.

The dining space

Visitors step into a refined townhouse positioned just beyond the bustling Place Flagey. The rooms blend historic architectural lines with exposed raw materials to foster a calm, unhurried mood. Evening service operates Thursday through Saturday, easily shifting between quiet suppers and booked private functions. A thoughtful wine pairing lineup walks alongside the evolving menu, allowing the ingredients to speak clearly.

Despite having grubby mitts from pitching in over at her vegetable garden in Overijse, and wrinkly fingers from doing the dishes as part of her catering services, Alice Pollet (ex-Little Tokyo and Choux de Bxl) still finds the energy to co-manage this zero-waste fine dining spot that strikes an organic, bobo chord (retro tiling, upcycled tables, kitchen discreetly hidden behind a tiny window). Also running the show is her brother Léonard, and they whip up goodies from their vegetable patch, alongside produce grown by the farmers over at Le Monde des Mille Couleurs, for a menu served in five explosively flavorful courses: after an appetizer of roasted squash, next came a huge dollop of beetroot mousse, a piping hot cheese tortilla and tender pork pluma served with a spicy broth and sweet potato… all knocked out by some exceptional North Sea razor clams sautéed with ginger and served with salsify, sunchoke velouté and crunchy chickpeas. Before finishing up with a thin and crispy tartlet overflowing with ricotta, plus zingy blackberry mousse with balsamic glazed redcurrants, and salted caramel popcorn.
