Chef Kevin Lejeune leads the kitchen, crafting French cuisine that balances contrast and precision. The restaurant’s Michelin Recommended status reflects its commitment to an immersive and memorable culinary experience.
The experience begins before reaching the table. Guests meet at Bar 21, a discreet spot for a Ruinart Blanc de Blancs or a Negroni, before ascending to the top-floor dining room. This double elevation—physical and symbolic—sets the stage for what follows. The open kitchen, centered around a majestic enamelled lava stone counter, transforms the meal into a live performance. Chef Lejeune and his brigade work in full light, turning precision into theater. “I’ve always dreamt of an open kitchen,” Lejeune says. “This closeness gives us intense moments of connection with our guests.”
The menu evolves constantly with the seasons and the chef’s inspiration. Guests choose between a 5-course or 7-course tasting menu, with omnivore options starting at €160 and vegetarian versions available. À la carte is not offered on Fridays and Saturdays. The cooking merges open flames with fine technique, creating dishes that are both balanced and intriguing. The atmosphere is one of light and dark, the elevated and the strange—a sanctuary where flavors whisper and textures captivate.
