Chef Maurizio Zizza, whose inspiration traces from the Tuscan hills to the Mediterranean, has created a space where authenticity and elegance meet. The restaurant’s name—"good manners"—reflects the care and respect given to both ingredients and guests.
Zizza’s deep attachment to Italian cuisine stems from his upbringing in Italy, where roots are the foundation of everything. He developed an immense respect for small producers and their products. At Le Buone Maniere, he transforms this reverence into gastronomic creations. The kitchen reinterprets pure Italian tradition with a contemporary edge, using noble ingredients to craft what the chef calls culinary opera d’arte. This commitment has earned the restaurant a Michelin Recommended award, a recognition of its refined, consistent offering.
The Autumn Menu 2025, titled "Armonia d'Autunno," showcases the balance between tradition and innovation. Antipasti include Vitello Tonnato alla Piemontese, a classic veal dish with tuna sauce, and Carpaccio di Manzo with almonds, green asparagus, and pomelo. Pasta highlights feature Risotto Basilico e Pistacchio with Belgian gray shrimp, and traditional Taglierini with black truffle from Norcia. Among the secondi, Marsala-glazed quail with potato-hazelnut croquette and seasonal vegetables stands out. The menu changes seasonally, always rooted in rigorous product selection.
The dining room is a preserved maison de maître, offering an enchanting backdrop for the meal. Guests can also enjoy a terrace, private rooms for events, and easy parking—a rare asset in Brussels.
