The story

Le Dillens Brussels: A Steadfast Bistro Recognized by Le Fooding

Founders and kitchen philosophy

Le Dillens in Brussels has operated as a dependable bistro since 2013, founded by Benjamin Raickman, Benjamin Rauwel, and Thomas Cherdo. Their approach centers on sustainable sourcing across the entire operation, from pantry staples to glassware. This steady commitment to quality produce keeps the kitchen grounded while maintaining a relaxed service style. Le Fooding recognized this unpretentious model when they listed the Saint-Gilles spot for 2026.

Chef Johnson and seasonal plates

Issiaka Johnson leads the brigade with a focus on straightforward techniques and unexpected flavor pairings. His recent service featured halved Brussels sprouts paired with thin apple slices and a cool buttermilk coffee emulsion. He also transforms everyday items into precise bites, like chicken wings glazed in bissap and sirop de Liège sauce alongside a rich chocolate mousse. The team rotates these preparations to match what arrives fresh, keeping each visit distinct.

Terrace light and vintage surroundings

Guests gather under a canopy that shifts between shade and sun depending on the afternoon hours. The dining room displays a historic map of Belgium behind the bar, creating a quiet backdrop for early morning espresso or late evening lambics. Large windows frame the street outside while the indoor seating accommodates groups seeking a slower pace. This layout supports the neighborhood bistro model as a consistent anchor where locals return for morning coffee or evening drinks.

This classic multi-purpose bistro at the bottom of the Saint-Gilles neighborhood, brought to you by Benjamin “Petit Ben” Raickman, Benjamin “Grand Ben” Rauwel and Thomas Cherdo (who is also behind the fussier Ivresse, in Uccle) fills up all those who would rather be here than at home. On the half-shady, half-sunny, village-like terrace or in the vintage interior, with its historic map of Belgium as a backdrop, we shoot back espressos, down lambics and suck up the house’s Wi-Fi. We come for breakfast, lunch, brunch and dinner too! What’s there to say about Issiaka Johnson’s cuisine? The night we went, he had us going up and down with a rollercoaster ride of a meal: halved Brussels sprouts and thinly sliced apple, sauced up in a buttermilk and coffee emulsion (served nearly cold); razor clams cooked in tequila that were pretty forgettable; tasty fish accras topped with some very hot mayonnaise; chicken wings in a very tasty bissap and sirop de Liège sauce; and a dense chocolate mousse. // Ringo de Balmalon
