The story

Menssa, Brussels – Michelin-Starred Counter Dining by Christophe Hardiquest

Menssa

At 26 seats around a single wooden counter, Menssa is a restaurant that strips dining to its essence: cook and guest, face to face. Chef Christophe Hardiquest, who earned two Michelin stars at his previous restaurant Bon Bon, opened this intimate space in Brussels in 2023. Here, he works without distance, plating each dish within arm’s reach of the person who will eat it.

The name Menssa is a blend of the Latin mens (mind) and mensa (table). It captures the restaurant’s philosophy: cooking as an act of consciousness, a meeting of memory and instinct. Hardiquest describes his cuisine as guided by what surrounds him—childhood tastes, family meals, old recipes found in well-thumbed books. “There is a form of heritage there, a certain belgitude that I assume,” he writes. “Over time, this memory became instinct.”

There is no hierarchy among ingredients at Menssa. A sea bass with caviar receives the same care as a leek vinaigrette. The menu changes with the seasons and is offered in four or six sequences, priced at €190 and €245 respectively, with optional wine or non-alcoholic pairings. A shorter three-course lunch is available Wednesday through Friday. The kitchen also champions a double signature: vegetarian dishes are treated with the same rigor as those built around meat or fish, never as an afterthought.

The dining experience is built around the counter. Guests watch the brigade at work—the searing, the saucing, the final touches. The service follows the same rhythm: calm, precise, engaged. “The counter is a space of freedom,” Hardiquest says. “It allows me to improvise, to be at the heart of the action, to adapt to the moment. Menssa is a living table.”

The restaurant earned a Michelin star in 2024, recognition of its high-quality cooking and the clarity of its vision. For those who appreciate cooking that speaks directly, without pretense, Menssa offers a rare kind of attention—to the product, to the gesture, and to the person across the counter.
