The story
In Linkebeek, just south of Brussels, Monsieur V is the kind of place where the chef cooks what he loves to eat. Jan Verhaert runs the open kitchen in this small, warmly styled bistrot, turning out precise, flavour-driven dishes that have earned the restaurant a Michelin Bib Gourmand for good quality, good value cooking.
The spirit is bistronomy – the sweet spot between gastronomic ambition and brasserie ease. Verhaert builds his menu around seasonal produce, selected strictly for taste, freshness and quality. Everything is made in-house, from the pâtés en croûte (the hare version is a regular draw for connoisseurs) to the confit pork cheeks and the baba au rhum.
The cooking shows a clear respect for French classics, with occasional nods to Italy. Scallops arrive precisely cooked, set alongside a fine Jerusalem artichoke purée and a hazelnut crumble. The venison stew – civet de biche – reveals Verhaert’s talent for slow-cooked dishes that are deep in flavour without being heavy. The cuisine is rooted in tradition, but the execution is anything but predictable. Gault & Millau awarded the restaurant 13.5/20 and two toques, calling it a “coup de cœur” and a “prix plaisir” for 2026.
The dining room is cosy and carefully kept, the kind of place where you can settle in for a long evening. The open kitchen lets you watch the action, and the service is straightforward and welcoming. Lunch is served Wednesday through Friday, dinner Tuesday through Saturday. There is outdoor seating for warmer months.
Monsieur V is the work of a chef who trusts his instincts – and his ingredients. That confidence makes every meal here feel both classic and personal.
