The Founders and Their Approach

Chiara Valenci and Inès Diaz stepped into the Saint-Gilles neighborhood after cutting their teeth at Le Coq and Cheval Marin. They built Solti to operate outside rigid restaurant schedules, updating the entire menu each month according to what catches their eye. This flexible framework allows them to pivot between French techniques and global flavors without losing focus. The result is a streamlined kitchen that prioritizes fresh ingredients over fixed traditions.

Signature Creations and Sweet Endings

The counter display rotates through substantial sandwich options like the glazed crispy chicken or tofu Bành Mì, both layered with cucumber daikon pickles and coriander. Regulars also line up for the toasted baguette sandwich loaded with pulled pork and tangy pickles. Behind the espresso machines, baristas pull shots through custom blends while pouring house-made celery soda or ginger ale. Every cookie and slice of Earl Grey carrot cake arrives baked fresh daily.

Things are getting seriously crunchy over in the Saint-Gilles neighborhood! Right next to La Porteuse d’Eau fountain, Solti is the new hangout from the dynamic duo that is Chiara Valenci and Inès Diaz (both ex-Le Coq and Cheval Marin). Housed in a tastefully designed, square-shaped space, locals flock to soak up the sun, get their caffeine fix and lunch in style. The day we went, we devoured: the Cubano – social media’s hottest sandwich – served here on a toasted baguette stuffed with juicy pulled pork, roast ham, Emmental, herby mayo and tangy pickles; as well as a soft sandwich roll generously filled with grilled cauliflower, broccoli rabe, marinated peppers, mayo and provolone. Good to know: the menu – half meat, half veggie – is updated monthly based the duo’s latest inspirations. Meanwhile, over on the counter display, prepare to be tempted by the super-moist Earl Grey carrot cake or the pretty little cookies, simple but delicious, and all homemade.
