The story
Super Fourchette in Brussels operates as a vegetable-forward cuisine destination that also functions as a record store and café-concert, recognized by Le Fooding for this multifaceted model. Founders Marie-Ève Tijou and Charlotte Bonamour Du Tartre established the venue near Place De Brouckère as a queer-safe space where a raised dining platform serves as a performance stage after dinner. The interior preserves high ceilings and decorative moldings. Industrial light fixtures and vintage furnishings complete the setting across the two-entrance layout.
The kitchen emphasizes homemade preparations rooted in the circuit court, building menus around seasonal shifts and partnerships with local producers. The bol du tigre combines quinoa tossed with fresh herbs and crudités under a generous pour of peanut sauce, frequently featuring grilled tofu infused with smoked paprika or breaded halloumi. L'assiette du marché arranges grenaille potatoes next to roasted peppers, which share the plate with cucumbers and radishes topped with ricotta and a spicy green sauce. Plant-based burgers follow distinct recipes, including the super burger that stacks smoked paprika tofu with gouda and house-made spicy mayonnaise alongside pickled red onions.
The venue houses an independent record store stocking vinyls and cassettes from micro-labels, with regular evening concerts showcasing local groups that extend the night beyond standard service hours. Sustainability dictates the service model, as every dish remains available for takeaway packed in consigned glass jars supplied by Le Moteuse. This zero-waste system eliminates disposable packaging while allowing the full menu, from starters like zaatar houmous and vegan bhajis to desserts served on-site, to travel home in reusable containers.
