RectoVerso in Ciney – French Seasonal Fine Dining with Michelin Recognition

Two chefs, one vision

RectoVerso was born from the collaboration of two 25-year-old chefs, Robin Van Habost and Thomas Serbeniuk. Van Habost honed his technique in Nice, while Serbeniuk refined his craft at Paris’s legendary Tour d’Argent. Together, they share a straightforward ambition: to transmit their passion through every plate and every detail of the dining experience.

In Ciney, in the province of Namur, they offer a French seasonal cuisine that puts local products at the centre. The kitchen works with nearby producers, respecting seasons and sourcing ingredients that speak for themselves. This commitment has earned the restaurant a Michelin Recommended distinction for 2026, as well as the Gault&Millau “Découverte de l’année” award in 2023 and a 14/20 rating.

The menus

The menu changes monthly. At lunch, a two-service formula is available for 35€. For dinner, three options unfold: the Tendance menu (52€) with a starter, main, prelude and dessert; the Balade (62€) with two starters, a main, prelude and dessert; and the Découverte (84€) with two starters, two mains, prelude and dessert. Each can be paired with wines selected by master sommeliers Pascal Carré and Aristide Spies.

Dishes from the current carte include Vitello tonnato with capers, mustard pickles, burnt lemon gel, pea and mint cream, and a Parmesan tuile; or Rouget barbet with sun vegetables, pearl couscous, smoked herring roe, and a creamy chorizo sauce. Main courses feature Vendsyssel salmon with cockles, mussels, North Sea grey shrimp, leeks, and samphire; and Pluma ibérico with broad beans, chickpea textures, baby courgettes, roasted apricots, and a mango-chilli beurre blanc. A signature dark chocolate moelleux with hazelnut-white chocolate coulis and pecan nuts in maple syrup finishes the meal.

A place for all occasions

Beyond the dining room, RectoVerso offers private spaces for business seminars and events, with a full floor available for private hire. The restaurant is open every day except Monday, Tuesday, and Saturday lunch. For parties larger than six, a phone call is preferred. Gift vouchers are also available.
