Robijn brings a refined bistro experience to Genk when Tim Vos traded his historical archives for a kitchen in 2021. His methodical approach earned a place on the Le Fooding list, recognizing a menu that balances archival research with everyday comfort. The kitchen favors provenance over presentation, building each course around ingredients that travel well together.

Small Plates and Global Flavors

This Bistro kitchen builds its service around bite-sized selections meant for sharing. Guests encounter Iberian ham paired with house-made rillettes, followed by a rustic Ardennes pâté and umami-packed preparations like oysters dressed with yuzu condiment and soy sauce. Wagyu beef carpaccio finished with ponzu and cockles simmered in creamy dashi round out the savory spread, while chocolate mousse and a Dame Blanche sundae close the meal.

A Cave Lined with Candlelight

Diners step into a low ceiling space designed to feel like a traditional cave à manger. Natural light fills the room during daytime service, then shifts to candle glow once evening arrives. The layout opens directly onto a sheltered back garden where outdoor seating remains available through warmer months. Every table sits near the wine list, which focuses on carefully selected fermented grape juices to match the day’s rotating plates.

Back in 2021, after leaving a career as a historian behind him, Tim Vos decided to open up this cave à manger complete with a back garden, all lit by candlelight at night. Keeping up appearances with the fermented grape juice gems, there are some heavenly porky goodies, like Iberian ham, top quality rillettes, rustic Ardennes pâté… and dishes in the spirit of the times, each accompanied by a wine suggestion: umami-packed oysters dotted with a yuzu condiment, olive oil and soy sauce; wagyu beef carpaccio with a zing of ponzu; cockles in a creamy dashi sauce; grilled Iberian pluma served with or without fries (not homemade, unlike the mayo); and classic desserts to seal the deal (chocolate mousse, Dame Blanche sundae). // Carlos Cotalosse
