The story
In the small village of Achet, part of Hamois, chef Gregorio Clavello runs Au gré des Saisons from a charming stone farmhouse typical of the Condroz region. The atmosphere is deliberately convivial and welcoming, a setting that matches the sincerity of the cooking. The restaurant's name—"according to the seasons"—is a promise the kitchen keeps by updating its menus regularly throughout the year.
The cooking here is described by the team as "gourmet" and "modern," with clear Mediterranean influences. Chef Clavello sums up his philosophy simply: "Good cooking is honest, sincere, and simple." The kitchen works with Belgian terroir products, as seen in seasonal dishes like a confit pork cheek with croquette and pesto, or a ballotine of farm chicken with asparagus and morels. A dedicated "Bib Gourmand" menu offers a curated selection that highlights this approach to value and quality.
The wine list is chosen with the same care, featuring vignerons who, like the chef, "work with love, passion, and respect for the product."
Au gré des Saisons holds a Michelin Bib Gourmand, an award that recognizes restaurants offering good quality cooking at a moderate price. This recognition fits naturally with the restaurant's straightforward ethos: a place where the focus is on genuine flavor, seasonal ingredients, and generous sharing, without pretense. Whether for a weekday lunch or a special evening, the restaurant also offers a private room for family celebrations and events.
