The story
For thirty years, Dirk and Friedl ran restaurant Carnac and its adjoining hotel in Koksijde. In 2017, their daughter Sofie and her husband Nils took over, renaming the restaurant NILS. The change marked a new chapter, but the spirit of hospitality stayed. Today, Nils serves Modern Cuisine in a relaxed bistro setting, with a focus on fresh, seasonal ingredients – a farm-to-table approach that reflects the kitchen’s respect for produce.
