Every morning the staff rolls fresh spaghetti alla chitarra before the lunch rush begins. Pizza dough rests for 48 hours using local wheat sourced from the Ferme du Château. Toppings rotate with seasonal availability but frequently feature Belgian pastrami, smoked provolone, and caramelised onions finished with a coffee aioli. A paired bruschetta starter introduces Breton sardines alongside spicy ‘nduja, leaving room for a baked sticky toffee pudding later in the meal.
Exposed brick lines the main floor while sturdy wooden benches sit near glass windows overlooking active brewing tanks. The layout keeps sightlines open during peak service hours, allowing staff to move freely between the pass and the bar.
