Fancy yourself as a bit of an armchair philosopher? Then head on over to Bastien Devos’s place, because there’s no one more Hegelian than this peroxide-blonde sage. Thesis: he’s worked it all, from pastry making to L’Eau Vive, a local gourmet restaurant. Antithesis: cycling runs in his veins, he gets his fix with social rides. Synthesis: the opening of this coffee shop safe place, where his passion for two wheels shines through – not just in the name, but also in the cycling jerseys hung on the walls and the bike frame hanging from the ceiling. As for the rest, the wooden cladding with its bruin café feel, the Picon-branded wooden tables and the khaki cushions all make you want to lose track of time. The fuel? Specialty coffee from Wild, pulled on the Marzocco, all the better paired with a chocolate cookie, vanilla rice pudding, lemon cake, or better still, a crispy piment d’Espelette, thyme and rosemary focaccia topped with pesto and mortadella.
