The story
On the outskirts of Namur, in the village of Leuze, L'Entretien turns an improbable setting into a genuinely warm and contemporary dining room. The restaurant was born from a playful idea – to create a restaurant inside a BMW service garage – and came to life thanks to the talent of Chef Robin Haquenne. The result is a space that feels both human and refined, where the focus remains squarely on what arrives on the plate.
Chef Haquenne practices a true cuisine de marché, meaning his menus change with the seasons and are built around whatever is freshest. The short, daily-changing carte reflects this disciplined approach, showcasing clean, precise Modern French cuisine that lets ingredients speak for themselves.
The menu is concise and built for discovery. Recent starters include a fine interpretation of smoked haddock with celeriac confit and green apple, or a luxurious starter of Cévennes onion paired with Cantal cheese and black truffle. Main courses lean toward hearty elegance, such as crisp-skinned cod with broccoli and Parmesan, or a signature Holstein beef accompanied by potato gnocchi and a rich beef jus. For those who plan ahead, a classic Beef Wellington – available on 48 hours’ notice and served for two – is a standout. A tasting menu (from two to five services) is offered by the whole table, allowing guests to experience the chef’s full range.
The passion extends beyond the kitchen. Chef Haquenne describes his craft as a fleeting art that transcends the simple pleasure of eating, aiming to engage all five senses. This ethos is shared by his dedicated team: pastry chef Alexis crafts the desserts, including a signature Paris-Brest with macadamia and Madagascar vanilla, while Amaury oversees a bar focused on pure, well-balanced cocktails.
