Her recent inclusion on the Le Fooding list reflects that willingness to adapt. The kitchen treats each service as a temporary experiment rather than a permanent menu.

Seasonal plates and techniques

Diners encounter a rotating lineup that moves swiftly between regions. Recent service featured pepper-spiced prawn gyoza alongside sake-cured pollack finished with miso butter and roasted root vegetables. Other nights highlight stuffed pasta carrying duck confit, cabbage, and bright kumquat. A dense chocolate cake bakes fresh to close the meal. It’s like a game of Tetris inside this tiny 10-seater eatery filled with vintage Asian knick-knacks and DIY-style, where Ombline Norberg has ripped up the rulebook she patiently learned under some of the biggest names (Le Chalet de la Forêt in Brussels, La Grappe d’Or in Arlon and Château du Mylord in Ellezelles), instead choosing to go with the flow with whatever takes her fancy. Her short menu was previously inspired by a trip to Italy, while this month it’s all about her Korean cravings. That night, there was a whiff of Japan in the air: wonderfully pudgy peppery prawn gyoza; sake-marinated pollack with miso butter, roasted turnips and parsnip purée; some crazily good ravioli stuffed with roasted cabbage, duck confit and kumquat. On top of all that, some mega chocolatey sachertorte fresh out the oven, a 1940s playlist, and some must-see decor in the bathroom! As it’s a one-woman show, with Ombline serving, cheffing and playing sommelier, don’t plan on popping in quickly for a meal en schmet. Instead, soak up the moment and suspend time. // Idoine Gérard
