The story
Within the 17th-century Château de Vignée, a landmark estate in the Famenne region, Arden is a restaurant that draws its identity from the land. Chef Marius Bosmans works with what nature grants, growing and gathering vegetables from the château's own greenhouse. His cooking is pure yet expressive, deeply rooted in the rhythm of the seasons.
The restaurant's French cuisine is built on local ingredients and a respect for the surrounding Ardennes landscape. The kitchen’s approach is minimalist: let the produce speak. A curated selection of wines and local craft beers accompany each meal, chosen to complement the flavours of the plate.
Arden's dedication to high-quality cooking has earned it a Michelin star. The guide describes it as "high quality cooking" – a fitting nod to the precision and integrity of Bosmans' work. The restaurant sits within a larger estate that offers boutique hotel rooms, a spa, and event spaces, but the dining room is the culinary heart of the property.
The château itself is a 400-year-old hunting lodge that once served as a field hospital during the Second World War. Today, it has been transformed into a lavish retreat, with interiors that take cues from the surrounding nature. Arden's dining room reflects this aesthetic: calm, unpretentious, and connected to the outdoors.
Menus change with the seasons, reflecting what is ready in the greenhouse and what local producers offer. The emphasis is on vegetables, but the kitchen also works with meat and fish from the region. The result is a meal that feels both grounded and refined – a genuine expression of the Ardennes terroir.
