The story
Hidden in the greenery of Tessenderlo, De Lindehoeve offers a dining experience where refined flavours and warm hospitality meet. The restaurant describes itself as a destination for "culinary refinement and hospitality," set in a rustic environment that reflects the richness of the season and local produce.
The kitchen is led by chef Pallieter, a local from Diest who trained at the renowned hotelschool Ter Duinen in Koksijde. His career includes stages at top restaurants both in Belgium and abroad, honing the skills that now define his creative, artisanal cooking. The menu changes with the seasons, featuring dishes like Hamachi with celery, Granny Smith apple, and dill; turbot with asparagus, egg yolk, vadouvan, and cockles; or lamb with paprika, artichoke, and black garlic. Desserts, such as strawberry prepared two ways with vanilla, elderflower, and buttermilk, round out the experience.
The cooking is grounded in Modern French techniques, with a clear focus on the ingredients of the moment. Guests can choose from a three-course lunch menu (Wednesday to Friday) up to a six-course dinner, with optional wine pairings ranging from standard to exclusive selections. A cheese course from Van Tricht affineurs is available as an alternative or supplement.
De Lindehoeve’s commitment to quality has been recognized by the Michelin Guide, which awarded it a Recommended status for 2026. The restaurant also offers a small number of rooms for overnight stays, allowing guests to complete their evening with a relaxed night’s sleep. A partnership with Troom provides chauffeur services for those who wish to enjoy a glass of wine without worrying about the drive home.
