At Bistronoom in Waregem, cooking is a family tradition. Chef Bernard Claessens grew up in his mother’s kitchen, trained at Hotelschool Ter Duinen, and honed his craft in Michelin-starred kitchens across Brussels and Flanders. In 1998, he opened his own restaurant in a picturesque Norman-style building set among the rolling hills of the Flemish Ardennes — a setting that feels both timeless and welcoming.

His son Henri was born just a month after the restaurant opened. Raised among pots and pans, he followed his father into the hotel school and joined the kitchen at nineteen. Today, the duo works side by side, creating a menu that balances classic Belgian dishes with contemporary touches. This commitment to quality and tradition earned Bistronoom a Michelin Recommended distinction in 2026.

A lunch or dinner in the countryside

The restaurant’s dining room is warm and understated, with large windows that look out onto the greenery. In summer, guests can eat on the spacious terrace. There is also a private room for up to 24 people, ideal for celebrations or business lunches.

The kitchen focuses on fresh, seasonal ingredients. From the menu, dishes like tartare of beef with foie gras and anchovy, or carpaccio of tuna with lime vinaigrette, show a clear respect for technique. Warm starters include glazed smoked eel with sea aster and beurre blanc, or pan-fried foie gras with chanterelles and port sauce. For mains, options range from line-caught sea bass with tomato salsa and chive purée to Holstein AAA filet pur or Mechels cuckoo chicken with truffle sauce.
