The Setting

Lin'eau occupies a beautifully restored flax mill in Sint-Baafs-Vijve, just outside Waregem. The space blends industrial heritage with contemporary elegance – exposed beams, clean lines, and a quiet sense of purpose. Every detail has been considered, from the tableware to the lighting. The result is a dining room that feels both grounded and refined, a fitting stage for the food that follows.

Lisa and Baptiste, the husband-and-wife team behind the restaurant, describe it as "a place with character and soul." The atmosphere is warm and unhurried, designed for lingering over a meal. Private parties and exclusive hire are available, and on warm evenings the outdoor seating offers an alternative view of the surrounding countryside.

The Chef

Baptiste’s career has been marked by two notable achievements. In 2023 he was named Viskok van het Jaar (Fish Chef of the Year), a recognition of his creative and sustainable approach to seafood. That same year he became a NorthSea Chef, an ambassador for responsibly sourced, locally caught fish. In 2026 he went further, winning the title Eerste Kok van België (First Chef of Belgium), an award for exceptional craftsmanship and technique. Michelin has also taken note, awarding the restaurant a Recommended status for 2026.

His cooking is grounded in modern French techniques but driven by a deep respect for the North Sea. Fish is the star of many dishes, prepared simply and precisely – pure flavours, no gimmicks. The menu changes regularly, reflecting what is freshest and most sustainable. On Friday and Saturday evenings, only a six-course tasting menu is offered, a format that lets Baptiste showcase his full range.

The Approach

Lin'eau’s cuisine is best described as modern French with a Flemish soul. The flavours are clean, the presentations elegant, and the service attentive without being stiff. Baptiste’s background in fish cookery gives the kitchen a distinct identity – dishes that are light, precise, and deeply satisfying. Even the non-seafood options reflect the same philosophy: respect for the product, clarity of taste, and a refusal to overcomplicate.

The restaurant is open for dinner Tuesday through Saturday, with lunch service on select days. Reservations are recommended, especially for the weekend tasting menus. Whether you come for the celebrated fish or the full six-course journey, Lin'eau offers a dining experience that honours both its setting and its craft.
