The story
In the heart of Québec City’s historic Saint-Jean street, Chez Boulay – Bistro Boréal has been quietly redefining what modern cuisine can taste like when it draws from the boreal forest. Since 2012, chefs Jean-Luc Boulay and Arnaud Marchand have focused on what they call “la rencontre du terroir nordique et du savoir-faire français” — the meeting of Nordic terroir and French know-how.
Their inspiration comes from the wild, extreme landscapes of the North: game, freshwater fish, wild berries, forest mushrooms, and even lichen. These ingredients, once overlooked, are now the foundation of a cuisine that is local, healthy, and inventive. The team’s commitment to this vision earned the restaurant a spot in the Michelin Guide, recognized as Recommended in 2026.
The cooking at Chez Boulay is not about novelty for its own sake. It is grounded in the rhythms of the Québécois seasons — spring foraging, summer abundance, autumn game, and winter preservation. The bistro setting is warm and unpretentious, with outdoor seating for warmer months and a thoughtful tasting menu for those who want to explore the full range of this modern cuisine.
Diners come for dishes like the classic macreuse de bœuf, a slow-cooked beef shoulder that has become a signature, and leave with a deeper understanding of what Nordic cuisine can be when it has an accent from Québec. Whether you visit for lunch, dinner, or weekend brunch, the experience is one of genuine hospitality — the team wants you to feel that every bite tells a story of the territory they call home.
